Hello Beauties! It's saturday in this part of the world, so I am screaming "happy saturdaaaaaaaay". I hope this meets you well. Are you a pizza lover? I know I am one beautiful pizza lover! Here's a low carb Mexican chicken tortilla pizza I'd like to share with you. I found the recipe on Instagram, so I'd like to give credit to @Healthy_italian for the recipe and photo.
Your end product might not look exactly like the image above, but I'm sure you'll do a great job making this pizza. I'm also going to be trying this out, so let's get started already!
Ingredients
*1 whole wheat low carb tortilla ( tortilla is a type of flatbread made from finely ground wheat flour)
*4 oz chicken breast
*Seasoning + 2 tsp part skim mozzarella (Italian cheese)
*2 tbsp black beans
*1 small Roma tomato sliced
*2 tbsp frozen corn
*2tbsp taco sauce
*Spray of extra virgin olive oil
*Salt and pepper
*Red pepper flakes to taste
Directions
*Preheat oven to 350*F
*Spray tortilla with olive oil and bake until partially crisped (only a few minutes)
*Sauté corn and black beans in a skillet until heated
*Remove tortilla from oven and use taco sauce as pizza source
*Sprinkle with more seasoning
*Add chicken, black beans, corn and tomatoes
*Top with mozzarella and sprinkle with red pepper flakes and Himalayan salt( premium salt commonly known as rock salt, helps regulate your body's bold sugar, water and PH levels)
*Return to oven until crust is crispy and cheese is melted
*Enjoy
